January was the month of New Year’s Resolutions. My New Year’s Resolution this year was to go vegetarian to decrease my carbon footprint, and so far it’s been a success!

Decreasing your meat consumption is a great way to lower your carbon footprint. A veggie diet creates 2.5 times less carbon emissions than a meat diet. Even designating one day or one meal to skip meat can make an impact.

These breakfast oats are a great way to make your breakfasts meat-free and are perfect for dashing to make that 8:30AM class.

Overnight Oats

2/3 c rolled oats

1 c unsweet almond milk

2 tblsp maple syrup

1 tsp vanilla

1 tblsp chia seeds

Any toppings you want! (I like blueberries and cinammon, but you can add chocolate, bananas, raspberries, etc.)

Mix together, put in a sealable container, place in fridge for at least 2 hours. Keeps for about 3-5 days in the fridge.
